Poached Whiting
Ingredients
Whiting
Capers
Anchovies
Samphire
Whole Egg mayonnaise
Lemon
Kalamata Olives
Pepper and Murray River Salt
Ozolio Olive Oil
Instructions
Bring skillet of hot water to the boil. Drop in whiting fillets and poach gently until cooked. Remove fish from pan and drop samphire into fish water and blanch for one minute. Remove from heat and drain. Mix samphire with oil, lemon, pepper and salt.
Arrange fish on plate and garnish with samphire and mayonnaise.

Mayonnaise
Chop olives and anchovies, de-stalk capers and mix into whole egg mayonnaise. Season with pepper.
